The Evolution of Pippinings

Twenty years ago, Dave and Desiree Knott left their corporate jobs at The Williams Companies. Dave, the lead network architect, and Desiree, the lead email administrator, took a huge leap of faith and opened High Gravity Fermentations, originally called High Gravity Homebrewing and Winemaking Supplies. This was the spark that ignited interest in craft beer in the Tulsa area. Over the next 20 years, homebrewers that started their hobby with Dave and Desiree, took their love of brewing and opened breweries. Tulsa now has 14 breweries with more in planning, all from discovering High Gravity Fermentations.

Unfortunately, in March of 2024, they made the very hard decision to close High Gravity, along with the brewery they opened in 2017.

 

Dave moved on to manage Small Batch Brewtique, a scaled down homebrew store opened to focus on the Tulsa area. If you’d like to get started brewing beer of making wine, check them out.

 

Desiree is doing graphics design, web design, and has continued High Gravity’s very popular trivia night that at various locations. Along with trivia she’s recruited Sam O’Hara, the ONLY KJ that matters, to host karaoke at various locations as well.

Desiree has also started a crafts business with her sister that specializes in Etched products, custom etching, and crocheted products, named Irish Twins Etch and Hook. Take a look at what they have to offer.

And in January 2025, she accepted a position as head of mead production for Dancing Skeleton Meadery, located in Sapulpa Oklahoma and is very excited to bring her skills to the skeleton crew.
